CAULIFLOWER MAC + CHEESE (KETO)

4 Servings | 10 Minutes Prep Time |25 Minutes Total Time

Ingredients

6-8 Cups of Cauliflower (one head)

¼-½ Onion (chopped)

¼ Cup Heavy Cream

2 Tbsp of Butter

1 Cup Cheddar Cheese (shredded)

1 Ounce Colby Jack Cheese(shredded)

1 Ounce Mozzarella Cheese(shredded)

4 Strips of Bacon (optional-bakedand chopped into bits)

Spices – Salt & Pepper

Directions

  1. Heat up one skillet on medium heat and preheat oven to 425 degrees.
  2. If using the bacon, place them on a foil on a baking sheet and preheat oven to 400 degrees. The trick is to put the bacon in immediately and let them cook as the oven heats up. Leave them in there for 16-18 minutes and then render the fat.  Set bacon aside and then higher temperature to 425 degrees.
  3. Cut the cauliflower into bite size pieces and then add them to the skillet. Cook for 5 minutes.
  4. Chop up the onion and add them into the skillet with the cauliflower. Cooke for 10 more minutes. Cauliflower should be slightly al dente for you will be putting them in the oven too.
  5. For the cheese sauce, in another pan combine the heavy cream and cheddar cheese. Cook on low, don’t let it burn, and then season with salt and pepper for taste.
  6. Put the cauliflower into a baking dish, then pour the cheese sauce on. Then you can add the other two shredded cheeses (or really any kind you want) on top of that.
  7. Bake for 10 minutes and then for that extra touch, you can broil the cauliflower for 3-5 minute for crispiness.
  8. If using the bacon, chop it up into bits and toss them over the top.
  9. Enjoy!

NOTES:

Cheese: You really can use whatever melt-able cheese you want!

Spices: I just sprinkle how much I want- do the same.
