Ingredients
1 Container Mozzarella Pearls (24 each/8 oz)
1 Avocado
1 Container of Grape Tomatoes (8 to 16 oz, depending on what you want)
1 Large Persian Cucumber (or regular one)
2 Tbsps Olive Oil
Fresh Basil Leaves
Lemon or Lime Juice
Spices – Salt, Pepper & Italian Seasoning
Directions
- Grab a large bowl and put it next to your cutting board.
- Cut the cucumber into fours and then make 1/2 inch chops and throw into the bowl.
- Cut the tomatoes in half and throw into the bowl.
- Drain the mozzarella pearls and add those into the bowl.
- Cut the avocado into square chunks and put them into the bowl.
- Squeeze citrus over the avocado and the other ingredients.
- Add olive oil and all spices into the bowl.
- Take a few basil leaves and roll them up then chop. Add these into the bowl.
- Mix everything together and Enjoy!
Notes:
Main dish: This can be the star of the show, you could have 1/2 of the whole bowl or more!
Side dish: Add grilled chicken or steak and make this your side dish, this would then make 4 servings.
Spices: I never measure, just sprinkle to your liking.
