AVOCADO, TOMATO, MOZZARELLA + CUCUMBER SALAD (KETO)

4 Servings | 10 Minutes Prep Time | 10 Minutes Total Time

Ingredients

1 Container Mozzarella Pearls (24 each/8 oz)

1 Avocado

1 Container of Grape Tomatoes (8 to 16 oz, depending on what you want)

1 Large Persian Cucumber (or regular one)

2 Tbsps Olive Oil

Fresh Basil Leaves

Lemon or Lime Juice

Spices – Salt, Pepper & Italian Seasoning

Directions

  1. Grab a large bowl and put it next to your cutting board.
  2. Cut the cucumber into fours and then make 1/2 inch chops and throw into the bowl.
  3. Cut the tomatoes in half and throw into the bowl.
  4. Drain the mozzarella pearls and add those into the bowl.
  5. Cut the avocado into square chunks and put them into the bowl.
  6. Squeeze citrus over the avocado and the other ingredients.
  7. Add olive oil and all spices into the bowl.
  8. Take a few basil leaves and roll them up then chop. Add these into the bowl.
  9. Mix everything together and Enjoy!

Notes:

Main dish: This can be the star of the show, you could have 1/2 of the whole bowl or more!

Side dish: Add grilled chicken or steak and make this your side dish, this would then make 4 servings.

Spices: I never measure, just sprinkle to your liking.
