LETTUCE WRAPPED TACOS (KETO)

4 Servings | 10 Minutes Prep Time | 25 Minutes Total Time

Ingredients

1 Lb. Ground Beef or Ground Turkey

2 Avocados

½ Cup Shredded Cheese (a Mexican blend would be perfect)

2 Romaine Lettuce Hearts

1 Lime

8 Ounces of tomatoes (chopped – about 2 Roma tomatoes)

¼ Cup Sour Cream

2 Tbsp Chipotle Sauce

¼ Cup Salsa

¼-½ Onion (chopped)

Spices – Taco Seasoning, Cumin & Chili Powder

Directions

  1. Wash lettuce and towel dry about 12 good pieces for the “taco shells”.
  2. Heat up a pan and throw the onion in and let cook partially.
  3. Add ground meat and let brown, you can drain the grease after that.
  4. Cut up tomatoes and avocados during this time. All of this should be split into 4 servings.
  5. Add all of the seasoning, I use a heavy hand for all three.
  6. Add the salsa and let simmer.
  7. Mix the sour cream and chipotle sauce together in a bowl and sprinkle it with chili powder.  This will be split into 4 servings as well.
  8. To plate, lay lettuce down like bowls and then add the meat evenly. I split ¼ of the total meat into 3 lettuce “tacos”.
  9. Add tomatoes and avocado on top, sprinkled the cheese evenly and drop a dollop of chipotle sour cream onto each.
  10. Juice lime over the top.
  11. Enjoy!

NOTES:

Messy: I rolled mine up a bit to eat and keep the yumminess from spilling out.

Leftovers: You can make these into a taco salad too, just cut up the lettuce and throw everything on top. Make sure to juice lime and salt over the avocado to preserve.
