MEAT LASAGNA + ZUCCHINI (KETO)

Ingredients

1 Lb. Ground Beef, Ground Turkey or Ground Sausage (you can buy Italian seasoned meat)

2-3 Zucchini (thinly sliced- like lasagna noodles)

¼-½ Onion (chopped)

15 Ounces Ricotta Cheese (1 tub)

1 Egg

1-2 Cups Spinach (can be fresh or thawed)

1 Cup Sugar-Free Pasta Sauce

½ Cup Parmesan Cheese (shredded)

½ Cup Mozzarella Cheese (shredded)

Spices – Salt, Pepper & Italian Seasoning

Directions

  1. Heat up one pan over medium heat off to the side and preheat the oven to 375 degrees.
  2. Chop up the onion, add into the pan and cook for 5 minutes. Then add ground meat to this pan and break up the meat and brown. You can drain the fat if you want.
  3. Then add the pasta sauce and let simmer for 5 minutes. This is when you can add the Italian Seasoning unless you bought pre-seasoned meat. Remove from heat and set aside.
  4. Cut thin slices of the zucchini horizontally so they are like lasagna noodles. Should be around 5-6 slices for each zucchini. To reduce the water in the vegetable you may pat them dry with paper towels.
  5. In a side bowl, mix the ricotta cheese and egg together with salt and pepper.
  6. In a baking dish put a little bit of the pasta sauce on the bottom and then start putting down the first zucchini layers.
  7. Then slather half the ricotta cheese mixture on top of the zucchini, sprinkle some spinach on top of the ricotta cheese mixture and then half of the meat and sauce mixture on top of that.
  8. You can sprinkle 1/4 cup of each cheese on top of that. Repeat the zucchini layer, ricotta cheese layer, spinach layer and meat sauce layer.
  9. Now this next step is up to you, you can either add another layer of zucchini (if you used 3) then add the remaining cheese on top OR (if you used 2) add the remaining cheese on top of the meat.
  10. Cover the lasagna with foil and place into over for 45 minutes.
  11. When done, let cool down and enjoy!

NOTES:

Cheese: You can add little mozzarella pearls on top for melting.

Garnish: You can add some chopped up basil.

Carbs/Veggies: Sometimes I even add some sauteed mushrooms and peppers into the ricotta cheese mixture if I am eating more carbs.

Spices: I just sprinkle how much I want- do the same.
